Foolproof Gluten Free Sponge Cake

  1. 4 medium eggs
  2. 250g caster sugar
  3. 250g self raising gluten free flour
  4. 250g butter, melted
  5. 6 tblsp milk
  6. 2tsp vanilla extract
  1. Preheat the oven to 180c.
  2. Grease and line two 20cm round cake tins.
  3. Add the eggs and sugar to a large bowl and beat until light and fluffy, preferably with an electric beater.
  4. Add half of the flour and gently fold it into the egg and sugar mix.
  5. Add the butter and beat into the mix.
  6. Add the remaining flour and fold in.
  7. Add the milk and vanilla, and beat the mix again.
  8. Split the mix equally between the two tins and gently shake them to ensure an even surface.
  9. Place in the oven and cook for around 25 minutes. The cakes are cooked when a fine skewer placed in the middle of the cake comes out clean.
  10. Leave in the tins for 10-15 minutes to cool before turning out onto cooling racks and leaving to cool completely.
  11. Decorate in any way you - with buttercream, fresh cream, fruit etc. The cooked cake can also support a complete covering of fondant icing.
  1. You can throw everything in a bowl together and mix, but I find you get the best results by doing it in stages, as above.
  2. This recipe will easily make two quite full 20cm round tins - you might like to reduce the amounts by a third and make a dozen lovely cupcakes.
  3. Use this as a base for other cakes, adding flavourings of your choice. Be aware though, that this mix does not stop chocolate chips and fruit from sinking to the bottom - sorry!

  1. Sounds great! I’m sure this cake would work well with slightly less sugar too . I have found it doesn’t effect the bake
