House Special Fried Rice
This is nothing like any dish you’ll get from a Chinese restaurant or takeaway, but it is delicious all the same. It’s a store cupboard standby recipe – change the ingredients based on what you have in the fridge.

For the Rice
- 2 chicken breasts
- 2 large pieces of belly pork
- 2 peppers
- 1 large(ish) onion, chopped
- 1 cup of uncooked rice
- 3 eggs
- Gluten free Soy or Tamari Sauce
- Chinese Five Spice
- olive oil
For the Sauce (optional)
- 200ml passata
- 2 tsp gluten free sweet chilli sauce
- 2 tsp honey
- 1 tblsp gluten free soy or tamari sauce
- black pepper to taste
For the Rice
- Place the uncooked rice with 1 1/2 cups of water in a glass bowl, cover with cling film and microwave for 8 minutes (or cook according to packet instructions).
- Meanwhile, heat a griddle pan or heavy based frying ban and add a tsp olive oil.
- Cut the chicken breasts into thick goujons and cut the belly pork pieces in half, add to the pan and cook through.
- Cut the peppers into chunky strips and cook these in the pan. If using a griddle pan, your meat and peppers should now have a lovely chargrilled effect.
- In a wok, heat 1 tbsp oil and cook the onion.
- Whisk the eggs and add these to the wok. Cook, stirring continuously, to break up the egg.
- When the meat and peppers are cooked, cut them into bitesize pieces and add to the onions and eggs. Mix well.
- Now add the cooked, drained rice to the wok, along with 1/2 tsp Chinese five spice and 1 tblsp gluten free soy or tamari sauce. Mix well and serve.
Method for optional sauce
- Whilst the meat is cooking, place passata, sweet chilli sauce, honey and soy sauce in a small saucepan, mix well and gently heat.
- Drizzle onto completed rice dish.
